Strawberry Lemonade Popcorn at a Glance

All you need is a lemon glaze, some crushed freeze-dried strawberries, and a fresh batch of popcorn straight from your Popper. Fifteen minutes start to finish.

Strawberry Lemonade Popcorn Ingredients

½ cup popcorn kernels

2 tablespoons coconut oil

1 cup powdered sugar

3 tablespoons fresh lemon juice (about 1½ lemons)

1 cup freeze-dried strawberries, finely crushed (pulse in a food processor or crush in a resealable bag)

Strawberry Lemonade Popcorn Directions
Step 1: Preheat
Set your stove to medium heat and allow your Popsmith to preheat for 1 to 2 minutes.
Step 2: Add Oil and Kernels

Add the coconut oil and let it melt, then drop in 3 test kernels. When they pop, add the rest of the kernels and cover the Popper.
Step 3: Pop

Crank the Popper continuously while the kernels pop to prevent burning.
Step 4: Remove
When popping slows to 1-2 seconds between pops, take the Popper off the heat and spread your popcorn onto a parchment-lined baking sheet in a single layer.
Step 5: Make the Lemon Glaze
Whisk together the powdered sugar, lemon juice, lemon zest, and a pinch of salt until smooth. The glaze should be thick enough to coat a spoon but still pourable — add lemon juice a little at a time until you hit that consistency.
Step 6: Glaze the Popcorn
Drizzle the lemon glaze over the warm popcorn in a thin, even stream. Toss quickly with a spatula to coat the popcorn before the glaze starts to set.
Step 7: Add the Crushed Strawberries
Sprinkle the crushed freeze-dried strawberries over the glazed popcorn and toss once more to distribute evenly.
Step 8: Set and Serve

Let your strawberry lemonade popcorn sit for 10 to 15 minutes until the glaze sets into a light, crispy coating, then break into clusters and serve.
