Red, White, and Blue Popcorn at a Glance
Every Fourth of July table has one showstopper that took somebody all morning. This isn't that. Imagine sweet and salty kettle corn fresh out of the Popper under a white chocolate drizzle, dotted with red and blue candy, and with Pop Rocks crackling like a sparkler in every bite.
That's red, white, and blue popcorn, and it takes about twenty minutes (mostly just waiting for the chocolate to set). Just follow everything below:
Red, White, and Blue Popcorn Ingredients

½ cup popcorn kernels

2 tablespoons coconut oil

2 tablespoons Kettle Corn Mix

1 cup white chocolate chips

1 teaspoon coconut oil (for thinning the drizzle)

¾ cup red and blue M&Ms (minis stick best, but regular work)

2 to 3 packets red or blue Pop Rocks

Pinch of flaky salt
Red, White, and Blue Popcorn Directions
Step 1: Preheat
Set your stove to medium heat and allow your Popsmith to preheat for 1 to 2 minutes.
Step 2: Add Oil and Kernels

Add the coconut oil and let it begin to melt. Pour in the kernels, put the Popper’s lid on, and give the crank a few turns so every kernel gets coated in oil.
Step 3: Add Kettle Corn Seasoning
The moment you hear the oil sizzling or that first kernel pop, lift the lid and add the Kettle Corn Mix. Not before. Sugar caramelizes fast, and adding it too early means it takes on too much heat and can burn the whole batch.
Step 4: Turn

Put the lid back on, and keep that handle moving the entire time. Constant stirring is what keeps the sugar from burning.
Step 5: Remove

When popping slows to 1 to 2 seconds between pops, pull the Popper off the heat and immediately transfer the popcorn to a parchment-lined baking sheet.
Step 6: Melt White Chocolate
Microwave the white chocolate chips with the teaspoon of coconut oil in 30-second bursts, stirring well between each, until smooth. Two rounds usually does it.
GOOD TO KNOW: The coconut oil thins it to drizzle consistency, so don't skip it. White chocolate scorches faster than regular, so stir even if it still looks solid; the chips hold their shape past their melting point.
Step 7: Drizzle and Decorate
Drizzle the white chocolate over the popcorn with a spoon, working back and forth across the whole sheet. While it's still wet, scatter the M&Ms, Pop Rocks, and flaky salt over everything. The chocolate is the glue, so don't wait.
Step 8: Serve

Leave the sheet at room temperature for about 20 minutes, or pop it in the fridge for 10 if people are circling. Break into clusters and serve your red, white, and blue popcorn.

The Pop Rocks survive the drizzle. White chocolate is fat-based, not water-based, so the Pop Rocks won't fizz out on contact. They hold their crackle until someone takes a bite, which is the whole show.

Serve it the same day. The popcorn holds overnight, but Pop Rocks slowly lose their pop once exposed to air. If you're prepping ahead, make the popcorn the night before and scatter the Pop Rocks over a fresh drizzle line the day of.

Keep the bowl out of the sun. White chocolate softens in summer heat, so park this firecracker popcorn in the shade or on the indoor table. It'll be gone before that matters anyway.

Work in batches if doubling. One sheet pan per batch. If you pile it deeper, the bottom layer misses the drizzle.

Want it less candy-sweet? Swap the M&Ms for crushed freeze-dried strawberries and blueberries. You lose the crunch, but the color gets even better.

Store leftover popcorn in an airtight container and consume within 3 days. Everything holds up except the crackle, so day-two popcorn is still worth eating, it’s just quieter.
