Lemon Poppy Seed Popcorn at a Glance

This lemon poppy seed popcorn is our latest creation. It's got that bright citrus zing you want when the weather warms up, a hint of sweetness, and those little poppy seeds for texture. Bring it to a picnic, set it out for a backyard hangout, or make a bowl for movie night. But fair warning: you’re gonna want to make a double batch!

Lemon Poppy Seed Popcorn Ingredients

½ cup yellow popcorn kernels

2 tablespoons coconut oil

3 tablespoons unsalted butter, melted

2 tablespoons honey or agave nectar

2 teaspoons lemon zest, freshly grated (about 1 large lemon)

1 tablespoon fresh lemon juice
-
1½ teaspoons poppy seeds
-
½ teaspoon vanilla extract
-
¼ teaspoon fine sea salt
Lemon Poppy Seed Popcorn Directions
Step 1: Preheat
Set your stove to medium heat and allow your Popper to preheat for 1 to 2 minutes.
Step 2: Add Oil and Kernels

Add the coconut oil to the Popper and drop 3 test kernels inside. When the first kernel pops, pour in the rest and cover the pot.
Step 3: Pop

Turn the Popsmith’s crank clockwise while the kernels pop to prevent burning.
Step 4: Remove
Once popping slows to about 2 seconds between pops, remove the Popper from the burner and transfer the popcorn to a large bowl.
Step 5: Make the Lemon Coating
In a small bowl, whisk together the melted butter, honey or agave, vanilla extract, lemon juice, and lemon zest until smooth.
Step 6: Coat the Popcorn
Pour the glaze over the popcorn in a slow, steady drizzle while tossing gently with a spatula or large spoon. Work quickly while the butter is still warm for the most even coverage.
Step 7: Add the Finishing Touches
Sprinkle the poppy seeds and sea salt evenly over the coated popcorn and toss once more. Let it rest for 5 minutes so the glaze can set.
Step 8: Enjoy

Once the glaze has set, serve your lemon poppy seed popcorn and dig in!

Fresh lemon makes a real difference here. Bottled lemon juice won't give you the same brightness. Use a microplane to zest before juicing so you don't lose any.

Want it sweeter? Add another teaspoon of honey or agave before drizzling. If you want it extra tart, add a squeeze more lemon juice.
