We know it’s still September, but it’s really never too early to start planning your holiday spread! If you want to try new recipes with your Popper for the most wonderful time of the year, butter toffee popcorn should be high up on your list. It’s the perfect companion for holiday movies, get-togethers with your whole family, or quiet evenings by the fire.
Here’s how to make it:
Butter Toffee Popcorn Ingredients
-
1 packet Popsmith Oh Sooo Buttery Popcorn
-
½ cup brown sugar
-
¼ cup butter
-
2 tablespoons corn syrup
-
½ teaspoon vanilla extract
Butter Toffee Popcorn Directions
Step 1: Preheat Popsmith
Set your stove to medium heat and let your Popper preheat for 1 to 2 minutes.
Step 2: Add Coconut Oil

Cut open the coconut oil part of your Oh Sooo Buttery portion pack, squeeze the oil into the pot, and let it melt and sizzle.
Step 3: Toss in Kernels

Now cut the kernel portion and drop 3 kernels into the Popper. Add the rest of the kernels when the first one pops.
Step 4: Add Buttery Salt

Open the seasoning packet and pour the salt into the Popsmith while the kernels start popping. Use about half first and add the rest later if you want your popcorn saltier.
Step 5: Crank

Turn the Popper’s crank clockwise as the kernels pop to get an even cook.
Step 6: Remove from Heat
When popping slows to 1-2 seconds between pops, take the Popper off the heat and transfer your popcorn to a parchment-lined baking sheet.
Step 7: Make Toffee Coating
Melt butter over medium heat in a medium saucepan. Add brown sugar, corn syrup, and remaining salt from popcorn kit, stirring to combine.
Continue cooking while stirring constantly — the mixture will bubble and foam as it heats. Cook for 3-4 minutes until the mixture reaches 240°F on a candy thermometer (the soft ball stage) or becomes smooth, glossy, and turns a rich golden brown color that coats the back of your spoon. Then remove from heat and quickly stir in the vanilla extract.
PRO TIP: No candy thermometer? Drop a small amount of the mixture into cold water. If it forms a soft ball that holds its shape but flattens when you press it, it’s ready.
Step 8: Coat Popcorn
Pour the warm toffee mixture over the popcorn and use a spatula to coat evenly.
Step 9: Cool and Set
Let the butter toffee popcorn cool for 5-10 minutes or until the toffee sets.
Step 10: Enjoy

Break apart large clusters and enjoy your toffee popcorn!

FAQs about Toffee Popcorn
Is toffee just overcooked caramel?
We wouldn’t say so. Both toffee and caramel start with butter and sugar, but toffee is cooked to a higher temperature and uses less cream. It’s harder and more brittle than caramel as a result. Caramel is cooked to a lower temperature and is chewy.
What’s the difference between caramel popcorn and toffee popcorn?
These two types of popcorn are on the sweet side, but we have to say toffee popcorn has a deeper, more complex flavor than caramel corn’s milder taste. Toffee also tends to be crunchier and less sticky, so your hands won’t get as messy during movie night.
Is toffee popcorn healthy?
While popcorn is naturally healthy, toffee popcorn is a sweet treat, not a health food. The toffee coating adds sugar and calories to what’s otherwise a whole grain. That being said, making it at home with your Popsmith means you control the ingredients and avoid artificial additives found in store-bought versions.
