Tropical Chocolate Coconut Popcorn Recipe

This chocolate coconut popcorn recipe is basically summer in a bowl, minus the sunscreen and sand in awkward places. It’s perfect for pool parties, outdoor movie nights, or whenever you’re craving something that delivers serious tropical vibes.

Chocolate Coconut Popcorn Ingredients

  • ½ cup popcorn kernels

  • 3 tablespoons coconut oil

  • 8 oz dark chocolate chips

  • 1 cup sweetened shredded coconut

  • ¼ teaspoon vanilla extract

  • ¼ teaspoon salt

  • ½ cup toasted coconut flakes

Chocolate Coconut Popcorn Directions

Step 1: Toast Coconut

Preheat your oven to 325°F. Spread shredded coconut on a baking sheet and toast for 5-7 minutes until golden brown, stirring once halfway through. Set aside to cool.

Step 2: Preheat Stove

Set your stove to medium heat and allow your Popsmith to preheat for 1 to 2 minutes.

Step 3: Pour Oil and Kernels

Pour 2 tablespoons of coconut oil into the pot and drop 3 test kernels. When the first kernel pops, add the rest and cover the Popper.

Step 4: Turn and Pop

Turn the Popper’s crank clockwise while the kernels pop to get an even cook and prevent burning. 

Step 5: Remove

When popping slows to 1-2 seconds between pops, take the Popper off the heat and spread the popcorn on a large parchment-lined baking sheet.

Step 6: Make Chocolate Coating

In a microwave-safe bowl, melt chocolate chips with the remaining tablespoon of coconut oil in 30-second intervals, stirring between each. Once the chocolate has melted, stir in vanilla extract and salt until smooth.

GOOD TO KNOW: Adding coconut oil makes the chocolate easier to work with. It will melt more smoothly and look glossier.

Step 7: Coat

Drizzle the chocolate over the popcorn and use a large spoon or spatula to coat it evenly. Then sprinkle toasted shredded coconut and coconut flakes while the chocolate is still warm.  

Step 8: Set and Break

Let the chocolate coconut popcorn cool for about 15 minutes or until the chocolate sets. Then break apart any large clusters and transfer to a huge bowl.

Step 9: Serve
